Biscuit

 

Biscuit is a great base for a fruit pie or a biscuit roll with a cream filling.

6 eggs
6 tablespoons sugar
6 tablespoons flour
2 tablespoons warm water

1.) Separate eggs and whisk egg whites

2.) Whisk egg yolks, water and sugar until it doubles in volume

3.) Fold flour and egg whites under the egg yolk mixture. Very careful, do not whisk but just combine.

Pour mixture into greased Kaiser spring form to make a base for a fruit pie.

Bake at 200 degrees for 12 minutes or so until it's barely brown.

To make a biscuit roll:

To make a biscuit roll, pour dough onto cookie sheet that's lined with parchment paper. Bake.

Meanwhile prepare a clean cotton kitchen towel by spreading it out evenly on an even surface and sprinkling it generously with sugar. Once biscuit is baked, flip cookie sheet up side down onto the kitchen towel and carefully remove the parchment paper. Immediately roll dough into taut cylinder. Let cool.

Once cooled fill.  I usually blend fresh strawberries or raspberries and add to whipping cream for a pink roulade.
