Rhubarb Pie with Baiser Topping

  Dough:
250 g (2 cups) flour
150 g butter (1 1/2 sticks)
50 g sugar (1/4 cup)
3 eggs
1/4 teaspoon salt

Topping:
3 tablespoons breadcrumbs
750 g rhubarb
3 egg whites
150 g sugar
powdered sugar

1.) Combine first 5 ingredients into a dough. Spread into greased Kaiser spring form. Sprinkle with breadcrumbs.

2.) Peel rhubarb and cut into 1 inch pieces.

Preheat oven to 200 degrees and place roast at lowest setting.

3.) Bake pie for 30 min.

4.) Towards to end of the 30 min. baking time, whisk egg whites until stiff. Slowly add sugar and continue whisking.

5.) Spread baiser on top of pie and continue baking for another 10 min. Then reduce heat to 100 degrees and let baiser dry for 1/2 hour in the oven.
